My lanlord petitioned me to appear in court over a rent dispute. I appeared as scheduled. His attorney offered to "make a deal". I refused. He then requested an adjournment from the judge because "he couldn't reach his client to get him to appear in court". The judge granted his adjournment. MY QUESTION: What can I do to prevent endless adjournments being granted to the landlord? I don't want to have to keep showing up in court a million times. I'd rather have the case resolved, regardless of the outcome.

One adjournment is always expected, two are common. Assuming you are in the trial part, after that ask the court to mark it "final." Of course make sure you're ready.
