Illegal subletting...what am I getting into?

I have found an apartment available for subletting; however, the current tenant
informed me that (technically), subletting is forbidden by the landlord. She,
apparently, has subletted before, having no problems, and wishes to do so again.
She has indicated that rent checks will be made out to her, and she will then
deposit the cash and re-write the checks from her account to the landlord.
The apartment is great, and I'd like to take it, but I'm afraid I may be surrendering
some crucial legal rights as an illegal sublettor.
What sort of document can I prepare to insure that I won't be evicted, stranded,
or generally screwed?
