It is customary and necessary for the Landlord to have your Social Security number. This is how they do credit checks to accept your tenancy and to follow up on you later. Remax is an agent for the owner in your case. Does your lease specify that you are to pay for utilities? If it does, LL was within her rights to call and establish service in your name if you failed to do so. If lease does not specify that you are to pay for the utilities, she has violated your lease. To set up a utility account when you are a landlord does not involve having to "pretend to be someone else". I just call the company and say I have a new tenant named Mary doe and provide all the necessary info. Of course, NYC laws may differ so check your local statutes.
