Lots of mistakes here

You have an illegal loft apartment. What's more, you agreed to rent it knowing full well what you were getting into.

Whether you decide to stay or go is up to you. Realize that both you and the building owner are in a rather precarious position legally speaking. You have no lease and decided to move in after the owner explained fully (maybe not fully enough) what you were getting into. If push comes to shove and legal problems arise, your owner could be fined by the city and forced to change the building back to whatever it was intended for. You, of course, would have to leave. This is what your owner was referring to when he asked you to agree not to "make trouble". Any trouble is going to be a no-win situation here.

Hopefully your gas has been restored, maybe you and the owner can work something out and you'll be happy with your loft space. But next time, be more assertive or less desperate when you look for an apartment.
