I've always heard that the landlord could only charge a rent stabilized tenant one month security and that they could not 'get around' this rule by calling the second month's security "the last month's rent". My friends' landlord tried that: they simply paid it to get the lease, then used it for the the last month of the first lease. They're on their 3rd or 4th renewal lease now.

Did you call DHCR and ask them?
If this is true, then you paid two months' security and the new landlord must give you credit for both and the landlord, not you, has to get the money from the previous landlord.
If it is Ok for the previous landlord to have two months' security, you might have to take him to Small Claims Court: there's a how-to on Tenant Net also.
